MALT EXTRACTS

With malt extract the malster has done most of the work for you. After milling mashing and lautering the malt, the wort is concentrated to a syrup. You simply add water and reconstitute the syrup to suit your needs. These kits will produce an excellent beer. Although the directions provided do not suggest boiling, boiling will sterilize the wort and help precipitate any unfermentable solids that can cause the beer to be hazy. Dry malt can be substituted for corn sugar on an equal pound for pound basis and will increase alcohol content, body and head retention. Rehydrating the dry yeast can significantly improve its' performance. Other improvements in the overall quality of your beer can be acheived through the use of grains to impart specific grain characteristics and color, hops to impart bitterness and aroma, Irish moss, gelatin or polyclar (fining agents) to improve clarity.
