American Style Ale - American Pale Ale

Recipe by Doug Kahn, Smithtown, NY
    INGREDIENTS FOR 5 GALLONS:
  • 1/8 lb. Crystal Malt
  • 1/2 lb. Wheat Malt
  • 3 lbs. Munton & Fison Lite Dry Malt Extract
  • 3 lbs. Munton & Fison Amber Dry Malt Extract
  • 1 oz. Galena Pellet Hops - 13.8% AA
  • 1 oz. Mt. Hood Pellet Hops - 4.3 % AA
  • 1 oz. Cascade Pellet Hops - 4.9% AA
  • 1/2 oz. Cascade Plug Hops - 6.4% AA
  • Wyeast #1056 - American Ale Yeast
    THREE DAYS PRIOR TO COOKING:
  • Break open yeast pack
    TWO DAYS PRIOR TO COOKING:
  • Cook a starter of 1 quart water and 1/2 lb. Lite Dry Malt Extract
  • Pitch yeast when cool
    BREW DAY:
  • Bring 1 1/2 gals. water to 160 degrees in your brewpot
  • Steep crushed Crystal and Wheat malts for 30 minutes
  • Remove grain bag and bring brewpot to boil
  • Boil for 45 minutes making additions as follows:
    45 Minutes
  • 3 lbs. Lite Dry Malt Extract
  • 3 lbs. Amber Dry Malt Extract
  • 3/4 oz. Galena Pellets - 13.8% AA
    20 Minutes
  • 1/4 oz. Galena Pellets - 13.8% AA
    15 Minutes
  • 1/2 oz. Mt. Hood Pellets - 4.3% AA
  • 1/2 oz. Cascade Pellets - 4.9% AA
  • 1 tsp. Irish Moss
    5 Minutes
  • 1/2 oz. Mt. Hood Pellets - 4.3% AA
  • 1/2 oz. Cascade Pellets - 4.9% AA
    PRIMARY FERMENTATION:
  • Chill with immersion chiller and add to 3 1/2 gals. cold water in primary fermenter
  • Chill to 78 degrees and pitch starter
  • Ferment at 70 degrees for 6 days in plastic
    SECONDARY FERMENTATION:
  • Dry Hop with 1/2 oz. Cascade Plug Hops - 6.9% AA
  • 2 tsp. Gelatin dissolved in 1 cup warm water
  • Age 7 days at 60 degrees in glass
    BOTTLING
  • Bottle with 2/3 cup corn sugar - wait three weeks to taste.
